Gelatin is a water-soluble heterogeneous mixture of high molecular
weight proteins. It does not exist in nature in the form of a
simple substance, but is obtained by controlling the hydrolysis of
collagen, which is found in the skin, tendons, ligaments, and bones
of animals. Widely used in pharmaceutical capsules
(pharmaceutical), candy, jelly, ice cream, adhesives, cement,
printing inks, photographic plates and films and other industries.
